Mushroom Crepe-y Goodness

Ingredients

  • 1 cup milk
  • 3/4 cup flour
  • 2 eggs, beaten
  • 1 tbsp vegetable oil
  • 2 lbs mushrooms (button, portobello, enoki, cremini, etc)
  • 3 cloved garlic, minced
  • 1/3 cup grated gruyere/oka/cheddar
  • 1/4 cup heavy cream (optional)
  • 2 tbsp salted butter
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme
  • 1 tsp Butcher's Block
  • 1/2 tsp salt
  • 1/2 pepper

Directions

  1. Make crepe batter with milk, flour, eggs and vegetable oil
  2. In a medum frying pan, saute in oil & butter the garlic, thyme, mushrooms, S & P for 5-7 minutes
  3. Add cream & cheese, saute for another 3 minutes until combined & melted
  4. Cook crepes, add mushroom mixture & serve
