Zucchini and Radish Flatbread with Goat & Blue Cheese

Ingredients

  • 200g pizza dough
  • 2-3 Tbsp flour
  • 2-3 radishes, thinly sliced
  • 1 zucchini, thinly sliced
  • 60ml 15% cream
  • 50g goat cheese
  • 2-3 branches fresh oregano
  • Olive oil
  • 20-30g blue cheese, optional

Spice mix:

  • 1 tsp Cold Smoked Sea Salt
  • 1 tsp Porcini Umami
  • 1 tsp sesame seeds
  • 1 tsp za’atar
  • 1 tsp dried rosemary

Directions

  1. Preheat oven to 425°F.
  2. Roll the dough with the flour until desired thickness. Transfer to a lined sheet pan.
  3. Lightly brush the dough with some oil.
  4. Add all the spices over the dough. Add the zucchini and a light drizzle of oil.
  5. Bake in the oven for 15-18 minutes.
  6. Whisk the goat cheese and blue cheese with the cream until fully combined (you can also use a small blender).
  7. Garnish the “pizza” with the radish, cheese cream, oregano, black pepper and a drizzle of olive oil.
