In a medium-sized bowl, whisk together the soy sauce, vinegar and 1 Tbsp of the Caramelized Coffee Rub.
Cut the tofu into 1/2" thick triangles or squares, and place them in the marinade. Refrigerate for 4-24 hours.
Heat a skillet to medium-high with the oil.
Spread the remaining Caramelized Coffee Rub in a shallow plate. Remove slices of tofu from the marinade, and dredge each in the rub then place in the hot frying pan.
Let the tofu cook for 5 minutes, then drizzle with your honey or maple syrup. Flip and cook for another 3-5 minutes.
