Mexican Shrimp à la Taquería

Ingredients

  • 2 teaspoons extra-virgin olive oil
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons organic taqueria
  • 1 1/4 lbs. shrimp, peeled and deveined
  • 1 lime, sectioned
  • Fresh cilantro

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and peppers and sauté until tender, 5 to 7 minutes.
  3. Add Organic Taqueria Blend and sauté an additional 30 seconds.
  4. Add shrimp to pan in an even layer and cook 1-2 minutes per side, until cooked through.
  5. Remove from heat and serve. Sprinkled with fresh cilantro and a squeeze of lime juice.
