Mini Frittata Cups

Ingredients

  • 8 eggs, cracked & whisked
  • 1 cup frozen chopped spinach, drained
  • 1 cup feta, crumbled
  • 1 cup tomato, diced & seeded
  • 1 shallot, minced
  • 1 Tbsp Aglio Napoletano
  • 1 tsp Holy Grail Garlic Salt
  • 1 tsp black pepper
  • 6 slices ham or capicola, cut in half, optional

Directions

  1. Preheat oven to 375°F
  2. Mix all ingredients into a bowl and pour evenly into a greased muffin tin
  3. Bake for 18-20 mins, until cooked all the way through
  4. Optional, line muffin tins with 1/2 sliced of ham or capicola
