Pumpkin Spiced Curried Rice
Ingredients
- 1 Cup jasmine or basmati rice
- 1 Tbsp. vegetable oil
- 4 Tbsp Spiced Pumpkin Blend
- 1 cup water
- 1/2 tsp. sea salt
- 1 cup coconut milk
Directions
- Heat the oil in a frying pan over medium-high heat.
- Add the Spiced Pumpkin Blend and sauté for 1 minute, stirring gently.
- Add the rice and stir until well coated.
- Stir in the water, salt, and coconut milk.
- Bring to a boil, the reduce the heat to low. Cover and cook for 30 minutes.
