Smoked Chorizo Corn Ole

Ingredients

  • 6 slices pre-cooked bacon, chopped (alternatively 6 slices bacon, cooked till semi crisp)
  • 1 large french shallot, thinly sliced
  • 1/2 red pepper, thinly sliced and cubed
  • 1 Tbsp Smoked Chorizo Rub
  • 2 cups peaches and cream corn giblets (frozen or vacuum packed)
  • Oil

Directions

  1. Add a small amount of oil to a frying pan on medium heat.
  2. Add bacon, shallots and peppers frying pan.
  3. When vegetables are soft make a well in the center and add 1/2 tbsp oil and Smoked Chorizo Rub and mix to encorporate.
  4. Turn up the heat to medium high. Add corn and stir until corn starts to char.
  5. Serve immediately.

    Tasty Tip: Toss leftovers into a salad for tomorrow's lunch.
