Remove roast from refrigerator and let it stand room temperature for about 30 minutes.
Preheat oven to 375°F.
Pat roast dry with paper towel, massage with butter and liberally coat with Organic Sunday Roast.
If roast is untied, tie at 3 inch intervals with cotton twine.
Place roast into a roasting pan and place in the oven
Cook for 30 minutes allowing the outside to brown. Reduce the heat to 225°F and cook until internal temperature reaches 135°F to 140°F (it will take an additional 1-2 hours depending on the size of the roast).
Remove from oven. Cover loosely with foil and allow roast to rest for 15-20 minutes before serving.
