I'm surprised you would use Saigon cinnamon if you were trying to create a blend "worthy of [your] name". Saigon cinnamon is considered to be lower quality than Ceylon cinnamon, it’s less expensive and easily found in grocery stores. Ceylon cinnamon, which is derived from the inner bark of the Cinnamomum verum tree is considered “true cinnamon.”

Thank you for your thoughtful feedback, Pamela! We chose Saigon cinnamon for its stronger, spicier flavour and more intense aroma (compared to Ceylon cinnamon).
But with that being said, I completely understand why you'd prefer Ceylon cinnamon, and I'm sharing your feedback with our R&D team right away so that it can impact our new recipe which is now in development.
